8 cloves garlic, minced
8 cups chicken broth
1 medium potato, peeled and cubed
2 carrots, diced
1 stalk celery, chopped
1/2 cup water 1 tbsp. olive oil
1 tsp. chives
1/4 tsp. thyme
salt and pepper to taste
Simmer potato, carrots, celery, garlic and olive oil in water for 15 minutes in a large saucepan. Add remaining ingredients and simmer until vegetables are tender.
